Olluquito
Olluquito is a dish made of meat and olluco, a potato-looking vegetable of the same family. Traditionally Olluquito is made with charqui—salt-dried/dehydrated llama meat.
Many Peruvians don't eat Olluquito with llama meat outside of the highlands, opting to replace the ingredient with beef instead.
Recipe for Olluquito
- Fry meat with garlic, ají panca (dried red peppers), diced onion, and lots of salt
- Stir the olluco in the beef and its juice; the result is a big pot full of the above ingredients
- Serve on a bed of rice
