Conchitas a la Parmesana (Parmesan Shellfish)
Conchitas a la Parmesana is considered an appetizer. The shellfish are sold in the markets of Peru with halved shells or shelled completely. When bought with the shell, they're purchased by the dozen. When without, it's by the kilo.
In November of 2007, a dozen conchitas sold for 1.89 nuevos soles (approximately US$0.65), and a kilo of shelled conchitas sold for about 26 nuevos soles (approximately US$8.65).
It's best to purchase the shellfish with their shell, as freshness is an absolute necessity.
Recipe for Conchitas a la Parmesana
- Add salt, pepper, olive oil, shredded Parmesan cheese, and a few drops of limejuice to the conchitas
- Bake in the oven for approximately 10 minutes
